I've heard that hill sprints are good at increasing CV fitness.
What's the best way of doing this and does it matter what steepness the hill is??

They are great for that and I would say find a running route that has some good hills in, and whilst running that route put some sprints in on the hills - go all out in bursts and really push yourself, then recover (jog) for up to a minute before going again.
Variations on the theme as you see fit, and depending on your route.
Alternatively find a decent steep hill, and after warming up, use it to sprint up then jog down and repeat as you see fit.
I've got a road hill near me that is really steep and just long enough to be a challenging sprint but not too far to make it undoable.
